Creamy Cashew Ice Cream (without ice cream machine)
1 cup of cashew nuts (soaked for at least 3 hours or 30 minutes in hot water)
2 cups full-fat coconut milk (1 whole can)
5 dates or 2-4 tablespoons of maple syrup
1 teaspoon real vanilla extract or ground vanilla
Pinch of himalayan salt
Creamy Cashew Ice Cream
Recipe:
1. Mix all the ingredients thoroughly in a high-speed blender
2. Pour the mixed ingredients to ice molds
3. Put it to the freezer for 2-4 hours
4. Mix it in the blender to create a creamy consistency.
5. It's ready! You can keep them in the freezer.
You can also add these ice cream to smoothies for creamy base. These ice cream are naturally sweet and creamy :) I just keep them in cubes and mix them in the blender before eating or just add straight to a smoothie.
